Nissan/Unicarrier Clamp Attachment

Could the mounting bolt of the lower bottom cylinder housing be sheared by too much hydraulic pressure being exerted by daily use (pallets to be specific)?

I would have to say no. Too much pressure should not shear the bolt. But it it was loose, then over time that could cause it to fail when pressure exerted on it.
